One place I know I love to go to is McMenamins. They have a chain of restaurants mainly in Oregon. Depending on which one you go to you can stay at a hotel, go see a movie, and there might be music and events going on too. While I'm not old enough to drink, my mother enjoys their beer. Two more places to go, is the Chinese and Japanese gardens. If you need more info, just look them up they have their own websites.

Portland has more brew pubs than any other city in the country. A trip up the spectacular Columbia River Gorge is fun. What you may run into towards the end of November is bad weather. Every year is different though and you may have gorgeous sunshine.
November is one of the worst months for fog in Medford. I don't mean to rain on your parade--just be prepared.
The town of Jacksonville is just five miles from Medford. It is an old gold rush boom town. There are lots of interesting little shops and the museum is worth a visit. I grew up there and I still like to go back and look at the old houses.

I am one who loves sightseeing. So I would recommend that you visit Crater Lake in the Medford vicinity.
Portland has Mt Hood not far, the scenic trail has some nice waterfalls , then there's Portland itself which is a town so you can go to the mall etc.
I enjoyed visiting Pittock Mansion, if you like to see something of the past and antiques in a lovely home. But you might want to check if Pittock is open at that time.
Don't know about dating etc. Sorry.
